Question: If it is said that God is that all encompassing the dualities such as good & evil, why then is God often described by various spiritualities as predominately a universal force of good? Why do non-dualists say God consciousness is only peace/love?

There two levels of Reality. Absolute Reality (Paramarthika Satya) and transaction reality (vyavaharika Satya). Absolute reality is higher order and transactional reality is lower order Reality. To give an example water (higher order Reality) appears as wave (lower order Reality). Lower order Reality changes but higher order Reality is changeless.
There is good and evil, right and wrong in lower order of reality. God is universal force maintaining order in the lower order of Reality. Non-dualists recognize both orders of reality. They speak of Higher order of unchanging reality (called as Para Brahman) as peace/love and lower order of reality of God (called Ishvara) as universal force of Good.
